There is no denying that I am a big big pancake fan! I do end up making panackes for breakfast about 2 times a week. They are super simple to make, use pantry ingredients and taste divine!
I have posted a few pancakes, both sweet and savoury. Usually the pancakes have flour added to them. I also have made flourless pancakes previously but they had banana as the main ingredient. As banana is a strong flavour, it might not suit a few tastebuds and hence I decided to try these chocolate blueberry flourless pancakes. They definitely are more time consuming to make than regular pancakes but still quite simple.
For this recipe (serves 1) we will need:
Eggs 2
Cocoa powder 1 tbsp
Sugar (fine) 2 tsp
Butter - melted 2 tsp
Milk 2 tsp if needed
Blueberries - handful
Method:
Separate the whites and yolks of the eggs. Whip the whites till you get stiff peaks. In the yolk, add in the sugar, cocoa powder, melted butter and make a smooth mix.
Fold in the whites into the yolk mix gently. Try to not lose the aeration. This will allow the pancakes to be nice and light. Heat a pan on medium high, ladle the pancake mix in and add a few blueberries. Cover and cook on one side for about 1-2 minutes or until done. Flip on the other side gently and cover and cook again.
Serve with fresh cream and blueberries.
