Gluten Free Breakfast Tacos

Who doesn't like tacos? They are full of flavour, you can use whatever stuffing you want, and you can have it at any time of the day!! And if you are a taco lover and are trying to be healthy, these will change your life.
The recipe is as simple as it can get, the taco shells are made with a thin layer of seasoned beaten egg, I chose a super spicy filling of potatoes and nduja sausages (getting hungry just typing this!). Layer the filling on the shell, add some avocado and mascarpone and you are done! Healthy, tasty, gluten free recipe ready in 20 - 25 minutes.
For this recipe (serves 1) you will need:
Ingredients:
1 egg
1 boiled potato
Nduja sausage (as per taste - I used about 1 tbsp)
Olive oil 1 tsp
Avocado 1/2 sliced
Mascarpone 2 tsp (One for each taco) - can be replaced by sour creme
Method:
Beat an egg and season with salt. Heat a pan and pour a bit of oil. Pour a thin layer of the egg on the pan and cook on both sides. You will be able to make two thin tacos out of the mix. Lay aside on a plate.
Take a boiled potato and chop in small pieces. Pour 1 tsp of olive oil in a pan and fry the potatoes. Add the nduja sausage, add 1 tbsp of water and cover and cook for 2-3 minutes.
Top the potato and sausage mix on the egg tacos, put some sliced avocado on top and 1 tsp mascarpone each.
