Mushroom Edamame Crepes

Prep Time: 10 minutes, Cooking time: 15 minutes

My favourite meal of the day is breakfast and hence they do tend to be my bigger meals of the day. I am more inclined towards savoury breakfasts. Even if I am having something sweet like a smoothie or a stack of pancakes, I make sure that I have a small savoury portion added in. 

Also, I don't get much time to cook the breakfasts as I am rushing to start work so they are always easy and quick to make while being delicious! This crepe recipe is one of my personal favourite that I have tried many a times with different fillings and it always is so pleasant!

The recipe for same which is as below (Serves 2):

Ingredients for Crepe:

Plain flour: 1/2 cup

Milk: 1/2 cup plus 1 tbsp

Paprika powder: 1 tsp

Salt to taste

Egg: 1

Baking powder: 1/2 tsp

Ingredients for the filling:

Button mushrooms: 5 - Sliced thinly

Edamame: 1/4 cup - can be replaced by peas

Semi Soft Cheese: 4 -5 small cubes - I used Durrus

Method:

1. Add all the dry ingredients for the crepe and mix well. Add in the wet ingredients, mix and let it sit for 5 minutes.

2. Saute the mushrooms in some butter, toss in the edamame towards the end. Add in salt and pepper to taste.

3. Pour a thin layer of the crepe batter in a hot buttered pan. Add in the mushroom edamame mix in the middle of the crepe in a line. Add cheese in every crepe, fold the crepe and serve hot.
