With most of my family being vegetarians, I have had beautiful experiences of eating and cooking vegetarian food. I love my meat but I think vegetarian food can be as (if not more) delicious.
There are various vegetables that work beautifully as meat substitutes as well. Oyster Mushrooms would be one of my top pics. They are extremely meaty, have a good bite to them and have a flavour profile that goes well with mostly everything. My second pick would be Jackfruit. They have got to be one of my favourite vegetables! Long before I knew the concept of meat substitutes, whenever my mother made a jackfruit curry, I would take it to be mutton! If cooked for a longer time, it also beautifully mimics pulled pork! Yum, writing this got me dreaming
The dish here is a very simple, yet elegant vegetarian meal option for those who love to spice things up. I actually got the mushrooms from the English Market (what better place in Ireland for veggies!)
Now for the recipe, it is a super simple dish. All you require is Oyster Mushroom, rice, rice noodles (optional) and tomatoes and Voila! you have a scrumptious dish ready.
The Recipe
Prep Time: 10 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients:
For the rice:
3/4 cup rice
1/4 cup wild rice
1and1/2 cup water
1/4 cup canned tomatoes
1/4th of a Stock cube
Salt to taste
For the Mushrooms:
2 Oyster Mushrooms
1 tbsp Mirin
2 tsp soy sauce
Garnish (Optional):
Dill
To cook the rice, add the water, tomatoes, stock and salt in a pot and bring to a boil. Add the rice and simmer till the rice is cooked.
Slice the mushroom in long medium thick slices (I got 6 slices out of the mushroom) Drizzle a teaspoon of olive oil on a hot pan and place the mushroom slices on it. Drizzle with half of the soy sauce and mirin. Flip once there is a beautiful char. drizzle the rest of the soy sauce and mirin and sear.
Place the rice in a bowl and top with the beautiful mushrooms. Garnish and enjoy!
