Soups are the easiest to make meals that are nutritious, delicious and comforting. When it comes to making a soup, there are hardly any rules! You can experiment with what goes in, you can make them mild or spicy, chunky or smooth, rich or clear, the options are endless. My favourite is to use up all that I have in my fridge and it never fails to be delicious.
This soup though is more of a classic and one of my favourites. It is super easy to make, uses only 3 main ingredients and is perfect for a cold, rainy day. I always blend the soup after cooking as it makes a creamy mix because of the potatoes.
For this soup that serves 2, you will need:
2 large potatoes
1 medium sized leek
1 tbsp butter
2.5 cups water
1 stock cube (veg or chicken)
Method:
Slice the leeks and saute in a pot with the butter until it is softened. Peel and chop the potatoes into meduim sized chunks and add to the pot. Add water and stock cube and bring to boil. Reduce the heat to medium, add salt and pepper to taste and let the soup simmer for 20 minutes or until the potatoes are softened. Let the soup cool down and then blend to make a smooth mix. I added ham and cheese croutons on top. They are super simple to make.
Ham and cheese croutons:
Take a slice of bread and spread garlic butter on top. Layer a slice of ham and add some cheese on top. Grill until nice and crispy. Chop and add to the soup.
