Spicy spinach tart

Easy and quick recipes that taste wonderful are the best! There are many days when I do want to cook something exciting but I just don't have the time. I have over the years come up with recipes that are quick to assemble and require the least attention while cooking. 

This recipe is very close to my heart because it has my 3 favourite ingredients: Cheese, spinach and nduja sausages. I made this in my 1 hour work lunch break on a dreadful Monday and now it proudly adorns my table on weekends. 

I have used shop bought pastry base for the tart, if you want to make your own and use that, it will work equally well. All this recipy calls for is mixing of the ingredients, spread the mix on the pastry and let the oven do its magic.

For this recipe(serves 2) you will need:

Rolled puff pastry: 320 gm - I used Jus-Rol

Spinach: 1 cup cooked and drained 

Egg: 1

Ricotta: 2 tbsp

Salt to taste

Nduja sausage: 2 tbsp

Method:

1. Layer the puff pastry on a greased baking tray

2. Mix the spinach, egg, ricotta and salt and make a smooth paste

3. Spread the paste on the pastry evenly. Dot with the Nduja sausage. (These are super spicy so use as per your discretion)

4. Pre-heat oven to 180 degrees and bake for 35 to 40 minutes until the pastry is cooked nicely.

5. Serve hot!
